The UC Davis Center for Nutrition in Schools (CNS) Celebrates with Elk Grove USD for Collective Action Day!

Just look at those vegetable and fruit costumes! This year, the Center for Nutrition in Schools (CNS) at UC Davis was invited to participate in a Collective Action Day event hosted at Monterey Trail High School in the Elk Grove Unified School District (EGUSD). The goal of the event was to provide hands-on learning activities for high school students during their lunch break that tied into the following categories:

  • Eat Healthy Food
  • Eat Local
  • Reduce Food Waste
  • Be an Advocate

Staff from CNS focused on Eating Healthy Food and Reducing Food Waste. The Center hosted a cooking demonstration for “Delicious Dunking Dip” from the Shaping Healthy Choices Program (SHCP) curriculum Cooking Up Healthy Choices. The recipe featured homemade hummus made with spinach and a variety of vegetables to dip with - YUM! Staff from CNS also partnered with the UC Davis Student Farm to emphasize reducing food waste through composting. All left over vegetable and fruit scraps from the demonstration were added to the UC Davis Student Farm’s compost bin, where they will someday help nourish future crops at the Student Farm!
