Swing into Spring with Fruits and Vegetables

Springtime is in full effect! The warm weather brings an abundance of fresh fruits and vegetables to your local grocery store, farmers market, and garden. Spring into the season with a variety of new fruits and vegetables!

 

During this spring season, soak in the sun and prepare meals with seasonal fresh fruits and vegetables that are nutritious and tasty! Here are some spring foods in season that you can add into your dishes:

  • Asparagus: High in Vitamin K and folate, asparagus is a great vegetable to incorporate into your meal!  There are three different varieties - green, purple, and white - which can make it fun for kids to try them all.  Serve it oven-roasted as a side with dinner or toss it into a stir-fry or salad!
  • Beets: Roasted, sautéed, or steamed, this fiber-rich vegetable can add a pop of color to your dish.  You can even try making a hummus dip by pureeing cooked beets!
  • Strawberries: This popular fruit is loaded with several vitamins and minerals and can be added to a salad, mixed in with yogurt, made into a jam, or blended into a smoothie.  If there is a local pick-your-own strawberry farm nearby, strawberry picking is a fun outdoor outing to get the whole family active!

 

If you find yourself buying the same fruits at the grocery store, consider going tropical! Add new fruits into your diet that you wouldn’t normally try, such as mangoes, passion fruit, guava, papayas, and pineapples.  Tropical fruits like these are rich in antioxidants and vitamins that could help prevent chronic diseases. These springtime fruits have a naturally sweet flavor that kids and adults will love!
